Big Box of Fruit + Sit-Up Assistant

Good morning!!! I’m posting in the morning… this is weird, right? I haven’t even had coffee yet. I could have sworn I hit “delay brew”, but I guess not! Life is rough.

This has been my favorite breakfast for a 6 months+! I love English muffins! I found this kind with raisins at Sprouts this week! I have no idea what brand they are. It was like an unmarked clear package? But they are so wonderful.

My typical morning is like this:

  • coffee
  • English muffin
  • wrangle grumpy Boyd out of bed
  • run with Pippa
  • fried eggs

It’s a good schedule.

Funny story. I took a video of Boyd growling at me (not mean — just his normal noises) when I was telling him to get out of bed yesterday.It was so funny that I decided to open it to Kevin. Who opened it during a work meeting!! He thought it was a picture so he just clicked to download it and wasn’t even looking at his phone when it started to play! Woops!! He had to explain to them what happened. Hilarious! I’m sure that meeting needed some comedic relief anyways. Finance isn’t exactly fun as far as I know of!

Here’s Pippa helping me do some post-run abs. So helpful! I hate locking her up any extra since she has to be if I have students or if I’m at the gym. So at-home workouts are miserable!!!

It’s not enough that the dogs leave all their hair and drool on my sheets. They have to take away my yoga mat too. Both of them are irresistibly drawn to it!

So I bought this huge box of fruits & vegetables yesterday. Someone came to my door selling it! They were so cute with a little truck and a salesman going around. Honestly, I was totally tricked into answering the door. It was almost piano student time, and I thought it was the UPS man!

I ate an apple and an orange right away. I had to prove to Kevin that we needed that box. Lol.

I took Pippa for an extra walk in the evening. She was in her crate for 1.5 hours yesterday, and I felt bad. Along the way we found this lovely bathtub.

Dinner was leftover chili with sweet potato fries!!! Mmmm!!!

Have you ever bought anything from a door-to-door salesman? KEVIN ALWAYS BUYS GIRL SCOUT COOKIES. Last year he came home with 4 boxes! I was shocked. Haha. I’m glad I remembered that. Now I can’t get teased any more about the box of produce!

Have you ever sold anything door-to-door? Not that I can think of, but we always sold pumpkins from my uncle’s farm in our front yard! It was so fun!

Don’t my sisters look like they think it’s a good idea?!

P.S. SHOUT OUT TO my sister HANNAH who shaved 6 minutes off her XC time at the meet yesterday! She’s grown up a little since that picture. Haha.

The Red Hot Blues Salad Masterpiece

Well, we had planned some sort of curry deal for tonight. But I was reading some blogs between the gym and the grocery store and saw this idea for Simple Cheesy Salsa on PB Fingers. Typically, I would make nachos, and call it day. But since we’re working on our clean eating, we had to do some justifying to make it happen.

Enter Red Hot Blues Salad Masterpiece:

It was amazing. And it knocked that awesome Mediterranean salad down to #2. Maybe that’s because there were chips involved. But still!!!

The delicious salsa dip was made with these 2 easy ingredients:

4 little wedges of Light Queso Fresco & Chipotle Cheese + 1 cup salsa. Obviously we chose HOT, but you could use any. It was so amazing.

The rest of our salad toppers: black beans (with taco seasoning), cilantro galore, and red onion.

The only picture I have of new Lulu pants that came in the mail today is in the chip aisle. I swear I went to the gym first!! I bought them with a gift certificate I had leftover from Christmas. I hope I love them… they do have some pretty nice ruching action going on!! But I’m not sure how I feel about the high-ish rise. Also: check out my squirrel hair. I decided it was time to wash it tonight.

Today’s workout: 4ish mile run + kettlebell circuit similar to the one I did two days ago. I can’t stop with the kettlebells because I can see little muscles in my abs!! It’s super motivational! Plus they really are fun to play with. I hope I never let one fly and hit someone…

Lunch was a bowl red potatoes, vegetables, and a 100-calorie English muffin with a little cheese!

So breakfast really deserved a post of its own, but dinner stole its thunder. This was my second time trying Chai Oatmeal. And it’s awesome!!! I like oatmeal, but I find it b-l-a-n-d. Even with peanut butter. It’s never enough peanut butter… until it turns into no-bakes! Haha. So I love that this recipe is flavorful without being sugarful.

Chai Oatmeal (adapted from Health)

Ingredients

  • 1 1/2 cups almond milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground turmeric
  • 1 packet of Truvia
  • 1/8 teaspoon vanilla extract, optional
  • 3/4 cup regular (not quick-cooking) oats
  • 2 tablespoons flaxseed

Preparation

Combine the milk, salt, and spices in a small saucepan, and bring to a simmer over medium heat. Simmer 5 minutes, stirring constantly; add the Truvia, vanilla (if desired), oats, and flaxseed (if desired), and stir until combined. Cook over medium-low heat, stirring constantly, for 20 to 25 minutes, or until the oatmeal is thick and creamy.

It’s my “almost weekend” again!! Hooray!! And Date Night tomorrow!!

What’s your favorite tortilla chip? Kevin made me love the Red Hot Blues. But we also love the whole wheat tortilla scoops. And I do like some of the flavored ones like Lime.

What’s your favorite summer date idea? I saw this list on Fit Sugar that I loved! But then again, Kevin and I always love eating best! :)

What type of exercise gives you the most NOTICEABLE results? Mental benefits —> running. Noticeable physical changes —> kettlebells or consistent yoga practice.

 

 

Peanut Soba Noodle Bowls + 5k/5 rounds Workout

Two new ingredients for me!

I felt healthier just holding these babies. Organic buckwheat soba noodles.

And Bok Choy! Another kind of “fear vegetable.” But like kale, I just threw it in with a bunch of stuff and nobody was the wiser!

I followed a recipe from ELR to make Peanut Soba Noodle Bowls. I just totallly skipped the tofu. Just have not ventured there yet! And I about tripled the red pepper flakes. We like it spicy! Love the spicy/peanut butter combo on noodles.

Our favorite thing about this dish? Kevin and I were both shocked that we weren’t hungry at 3PM. Usually I’m starving just an hour or two after lunch, but this meal really tided me over to our late dinnertime.

Okay. You can stop reading now if you don’t like to push it in your workouts. :)

On days when I don’t feel like doing a long run and I really don’t feel like doing weights, I try to trick myself with crazy circuit workouts where I don’t have to do the same thing for too long. I wanted to get at least a FEW miles in today so I decided to divide it up into kilometers.

1 kilometer = .62 miles

That’s a nice happy amount to run. More than a half mile, but considerably less daunting than a full mile. Trust me. I ran for a year on treadmills that only displayed kilometers. They ticked off so much more quickly! It was so gratifying.

So here’s the workout.

  • Run 1 kilometer (could sub jump rope or other cardio)
  • 90 seconds of lateral burpees AMRAP (as many reps as possible)
  • 90 seconds of kettlebell swings AMRAP (can sub dumbbell)
  • 90 seconds of hopscotch curls AMRAP (could sub squats)
  • Repeat 4 times

Lateral Burpees: These were introduced to me by a blog reader Dana @ My Little Celebration. When I blogged about doing 7 minutes of burpees, she suggested this alternative form of fun torture.

The lateral jump was actually really hard for me. Haha. I couldn’t get my feet to stay together, and I’m a huge pansy about jumping over things. But I did at least 10 reps in each round for a total of 53!!

Kettlebell Swings: Classic & awesome.

Hopscotch Curl: Fun.

Check that sprint in! I guess I was holding back a little. But trust me, by that point I was coaching myself aloud,”Just one more round!!!”

In case you’re wondering how I keep track, I snap a quick photo of the treadmill after each run, and I use the 4 Time tabata app. I set it for rounds of 90 seconds work and 30 seconds of rest. Just barely enough to tap in my reps.

At the end of each round I took a screenshot of the results and tabulated them just now when I uploaded my photos. It sounds complicated, but if you are as attached to your baby iPhone as I am – it’s NBD! That thing is a great workout tool.

I’d definitely do this workout again because it’s easy to remember and you’re never doing the same thing for too long. Although I’m nervous about my arms feeling those burpees tomorrow!

Ever tried bok choy? It’s an excellent source of Vitamin C! Orange juice is for the birds, people!

Any more burpee variations for me to try? I was seriously waiting like 5 days to try that one since my arms were too sore for me to even plank it out the last few days!

What are you doing this weekend?! We finally slept in today. So nice. We had our Saturday Sbux, I got some housework done, did that killer workout, and went to Marriage + Class. Tomorrow we’re teaching Sunday School, but then we have a free afternoon (minus Kevin’s homework – boo!).

Chocolate, PB, & Fear Vegetables

I woke up with a little Valentine’s Day hangover this morning and wasn’t in the mood for anything but my cafe.

So I just sat around looking sullen while Kevin ate breakfast and drank a few sips of my coffee. It’s always too hot for me until I get to work!

Around 10AM, my stomach had righted itself, and I dug out my PB Puffins. Yay!! I actually stayed at work for a lunch meeting today! I’m such a young professional! Haha. We ordered Jimmy John’s which I was a little skeptical about, but it turned out okay. Trust me when I say that I Googled the nutrition facts to find something that wasn’t a complete carb trap. The Veggie Club has 773 calories and 38 grams of fat – FYI!

And some chocolate for my afternoon snack!! I love these little guys. They’re on sale this week at King Sooper’s! I remember always wanted to buy the mini chocolate soymilks when I lived in the DR, but I actually did the peso-dollar calcuation (for once in my life) and they were about $3 a piece!!

Today’s workout: 5.10 miles running + a kettlebell workout!

We completed a version of this Summer Bikini Blast workout from MyoMytv. I always study the videos and take notes before I go to the gym. I swear I was even dreaming about kettlebell form last night! I kid you not!

I actually talked Kevin James into trying it! That’s a miracle. He’s usually very skeptical of the tabata-ish workouts I do. It’s probably because I make so many painful noises. I got to practice my personal training skills on him! His squats and lunges made me very nervous!! We really need to work on his form! :)

I will say he took my pointers very well. And he should. They were mostly direct quotes from the like of Jillian Michaels! He did get a little sassy with me a few times, but I know it’s tough being beat by a girl. I got my karma for being a pain because I cranked my neck weird while doing show-off jumping jacks. It takes a special to feel the need to show off during jumping jacks… It still feels weird to turn my head!

Today I conquered one of my fear vegetables. Kale!

Whole Grain Spaghetti with Garlicky Kale & Tomatoes.

It was NOT love at first bite. But after a few tries, it tasted kind of like a crunchy spinach/broccoli type thing. I like spinach and broccoli!! I’ll keep working on it!

My other fear food is edamame. Yeah, I thought it was a vegetable there for a second. Give me a break. It looks like peas! Yuck!

I tricked Kevin into doing dishes while I constructed the ultimate chocolate dessert for him. Really, it was just leftovers of the 2-ingredient fudge and last night’s cake crumbled up in a mini trifle bowl! I licked the frosting knife for my dessert. My life is so rough. Haha.

Kevin also scored these questionable chocolates that I found on my desk this morning….  What a brave soul.

It Will Rain Sweat + My Lean Green Dinner

Our first day back to normal schedules. How did you survive? My co-workers and I were definitely dragging today!

I got a little jumpstart on my day with some fun at-home torture. Last night, I couldn’t decide if I was going to get up early or not to sneak in some strength training. I tricked myself out of bed by promising myself I would just do some Pocket Yoga.

Oh my. Child’s pose felt. so. good. today. But I am so out of shape. I about died when I had to lift a leg while in Downward Dog. My runner legs are tight. I lasted about 15 minutes with one of the Mountain routines. That’s about all the longer the yoga app can usually hold my attention, especially when nobody’s watching!!

By that time, I was awake enough to move on to some bodyrock! I saw their It Will Rain Sweat workout posted, and I wanted to try it for myself. You are supposed to do 10 rounds of 10 reps of 8 exercises. I suffered through 3 rounds, and it wasn’t pretty.

If you’d like a little taste:

  • 10 Burpees
  • 10 Squat Jumps
  • 10 Push Ups
  • 10 Toe Touch Sit Ups
  • 10 Tricep dips
  • 10 Tuck Jumps
  • 10 Plank Jaxs
  • 10 Split Lunges

The problem is that burpees are killer for me so I started every round exhausted!! But I really get into it because you’re supposed to write down your time after each set and compete against yourself. That’s very motivational for an introvert. Lol.

Top top it all of, these days I have the Bodybugg to please!!! The thing is asking me to burn a whopping 2700 calories per day. It has really opened my eyes to the bummer of a sedentary job. I’ve never been able to stand sitting at my chair all day, but this realization has made it even worse. Let’s put it in perspective, I also ran 7.69 miles @ 7:43 pace at the gym tonight. But since I was virtually completely inactive (I’m not hard core enough to wear my Bodybugg to the office — plus it would really clash with my pencil skirts) throughout the day, I’m still short on my suggested calorie burn. Isn’t that crazy? Of course, I have it set on the more intense end, because , well, that’s me. But still!!

We started our breakfasts with a nice, beautiful 1/2 grapefruit. Don’t think for one second that I didn’t scarf a super size bowl of Chex cereal afterwards!! I need some serious fuel when I eat in the morning! I just wanted a picture of the grapefruit because it looked nice in the bowl.

Look at us! We’re making progress on the vegetable front!! Look at all those greens. I also brought out my favorite fruit — the avocado!!

Creamy 15-Minute Avocado Pasta

  • 1 medium sized ripe Avocado, pitted
  • 1/2 lemon, juiced + lemon zest to garnish
  • 2-3 garlic cloves, to taste
  • 1/2 tsp kosher salt, or to taste
  • ~1/4 cup Fresh Basil
  • 2 tbsp extra virgin olive oil
  • 2 servings/6 oz of your choice of pasta
  • Freshly ground black pepper, to taste 

Directions:

1. Bring several cups of water to a boil in a medium-sized pot. Add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes.

2. Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor. Process until smooth. Now add in the pitted avocado, basil, and salt. Process until smooth and creamy.

3. When pasta is done cooking, drain and rinse in a strainer and place pasta into a large bowl. Pour on sauce and toss until fully combined. Garnish with lemon zest and black pepper. Serve immediately. Makes 2 servings.

Because I’m a huge cheater, I’ve been using ginger and basil in these little toothpaste tubes. Yeah. I bought it because I needed ginger for the channa masala, and I hate preparing ginger. It makes my hands smell so gross. And then they were 2/$7 so being the sucker that I am, I had to buy 2. Yeah, I said 2/$7. And we wonder why our grocery budget is always shot!! Actually, I bought these in 2011 because I figured we’d already ruined it for that year!! :) But it’s so convenient and truly wonderful. I would love to have a basil plant. Do you think they can grow in an apartment without any light? And I mean, zero light.

What fruits/vegetables did you eat today? Grapefruit, broccoli at lunch & dinner, green beans, avocado, and strawberries. Can’t believe I went a day without spinach!

Do you have an active or sedentary job? Man, I wish I would’ve had this Bodybugg when I taught music and P.E. Not to mention that my classroom was about a quarter of a mile away from the rest of the school which I had to walk several times a day!! I had it good!! :)

Hungry Friday: Summer Eats

Dreaming of cooking for Kevin James this summer! :)

First on the menu – hummus and tabouli wrap! I know Kevin would like this because he loves both hummus and tabouli. So earthy. But I can’t really imagine us drinking it with milk. Maybe if we have kids someday…

Or how about some Garlic Lemon Chicken Kabobs? Kevin got some manly grilling tools at our shower in Minnesota, and I’m sure we’ll be eager to bust them out!

I think they would go well with green bean fries.

I saw these baskets on SurLaTable and they would be perfect to serve summer food in!

And you know the man of the house is going to need dessert! Grilled peaches.
