Denver Date Night: Kokoro + Another Girl’s Treasure

Kevin and I were emailing each other all morning:

“Hey! It’s Date Night!” (Yes, Date Night has become an entity worthy of capitalization).

And, “COOKIES!!!!” (I’m a cheater now that I’m a worker bee and I usually make them Thursday night).

We so look forward to Thursdays!

Kokoro was suggested to us by our friends Ryan & Amelia, and since they gave us a coupon we couldn’t resist trying it out right away!

Since Kevin totally stole what I wanted to order, I chose the chicken soba-ghetti with steamed vegetables. Pretty good overall, but I wasn’t wild about the sauce. So I did what I do best and sweet talked Kevin into a little trade.

Much better. Kevin ordered the chicken curry bowl over brown rice. Yum!Also, can I just say that I love restaurants that give you the option to order all-white meat! Totally wins my heart.

The restaurant had a quirky, casual vibe and looked a bit like it used to be an old-fashioned diner. Cute!

We had a few things to pick up so we headed Target while where we were out. I always like checking out their grocery section to see what goods they might have that the grocery store in our hood is missing.

I found two very important things:

German Chocolate Cake marshmallows? Are these supposed to be snacks? I’ve learned my lesson about using marshmallows in baking, but there’s got to be a use for some of the cool flavors. Bars? I don’t like them, but Kevin would! And you can always pawn that kind of thing off at the office! :)

A new Sun Chips flavor!!! I am not going to say no to Creamy Roasted Garlic Sun Chips! I did have to pitch a short fit in the snack aisle that it’s a smaller bag for the same price. They’re not fooling me! I even suspect that the regular flavors were in smaller bags.

By the way, did you hate the extra noisy Sun Chips bags? My nerdy little brother did, but I didn’t think it was a big deal. Maybe that’s because I’m just always noisy when I’m eating.

Earlier…

I can barely squeeze my mini breakfast plate on the table with all the puzzle action going on (or not going on) all over the dining room table! I got up a whole 5 minutes early so I could have eggs & English muffins with jam and honey. I’m dying to make English muffins from scratch… maybe if I can ever get them to lay me off!

Good news! My co-workers have long since given up on offering me the caramel corn and the cookies, but they know I won’t say no to fresh berries. This is the second time this week they brought in raspberries and blackberries!!! They’re so sweet. They told me today that they’re going to miss me when I’m gone, and one of them is always threatening to call the school that was crazy enough to not hire me for that job last month.

If you still look pretty when you’re done, you did it wrong!

That’s not really my life motto since I like to wear mascara, earrings, and coordinated Nike outfits when I run – but I’m going to claim it for today!

Today’s workout: 1.06 mile warm-up + 4.50 miles in 33:13 (7:22 pace). I was drenched because for some reason I chose to wear pants. I didn’t really plan out my workout ahead of time, and I was feeling lazy when I left so I didn’t want to get my legs cold. The funny part? I forgot the code to our apartment’s gym. Do you know how many times I’ve been in that place? I mean, I literally couldn’t remember one number. Luckily, the office was open so I could go around the other way!

I got some feo new weights! Kevin found those 8 pounders by the dumpster yesterday and came in to ask if I wanted them. What a good husband. They’re the perfect weight for me since I’m getting a little to ripped for the fivers most of the time. After my run, I had a sudden panic that I hadn’t done anything but cardio this week. So I did 27 minutes of Nike Training Club’s Endurance Master workout. Kind of makes me sound like I’m not the Endurance Master since I only did 27 out of 45 minutes, but I didn’t have the luxury of spending my entire afternoon exercising today. :)

What piece of workout equipment do you wish you could find by the dumpster? Haha. Awesome question, right? Well, obviously a treadmill would be #1! But I’d also like some more kettlebells!

English muffins or bagels? English muffins!!! I do like bagel thins. The everything ones are really good.

Girls, do you wear lipstick? No, but I spotted this today. I might be able to handle it. For special occasions like Date Night! It looks like a giant crayon. I chose the Cruella color because I had a student who used to call me that all the time. She was joking, right? ;)

Chocolate, PB, & Fear Vegetables

I woke up with a little Valentine’s Day hangover this morning and wasn’t in the mood for anything but my cafe.

So I just sat around looking sullen while Kevin ate breakfast and drank a few sips of my coffee. It’s always too hot for me until I get to work!

Around 10AM, my stomach had righted itself, and I dug out my PB Puffins. Yay!! I actually stayed at work for a lunch meeting today! I’m such a young professional! Haha. We ordered Jimmy John’s which I was a little skeptical about, but it turned out okay. Trust me when I say that I Googled the nutrition facts to find something that wasn’t a complete carb trap. The Veggie Club has 773 calories and 38 grams of fat – FYI!

And some chocolate for my afternoon snack!! I love these little guys. They’re on sale this week at King Sooper’s! I remember always wanted to buy the mini chocolate soymilks when I lived in the DR, but I actually did the peso-dollar calcuation (for once in my life) and they were about $3 a piece!!

Today’s workout: 5.10 miles running + a kettlebell workout!

We completed a version of this Summer Bikini Blast workout from MyoMytv. I always study the videos and take notes before I go to the gym. I swear I was even dreaming about kettlebell form last night! I kid you not!

I actually talked Kevin James into trying it! That’s a miracle. He’s usually very skeptical of the tabata-ish workouts I do. It’s probably because I make so many painful noises. I got to practice my personal training skills on him! His squats and lunges made me very nervous!! We really need to work on his form! :)

I will say he took my pointers very well. And he should. They were mostly direct quotes from the like of Jillian Michaels! He did get a little sassy with me a few times, but I know it’s tough being beat by a girl. I got my karma for being a pain because I cranked my neck weird while doing show-off jumping jacks. It takes a special to feel the need to show off during jumping jacks… It still feels weird to turn my head!

Today I conquered one of my fear vegetables. Kale!

Whole Grain Spaghetti with Garlicky Kale & Tomatoes.

It was NOT love at first bite. But after a few tries, it tasted kind of like a crunchy spinach/broccoli type thing. I like spinach and broccoli!! I’ll keep working on it!

My other fear food is edamame. Yeah, I thought it was a vegetable there for a second. Give me a break. It looks like peas! Yuck!

I tricked Kevin into doing dishes while I constructed the ultimate chocolate dessert for him. Really, it was just leftovers of the 2-ingredient fudge and last night’s cake crumbled up in a mini trifle bowl! I licked the frosting knife for my dessert. My life is so rough. Haha.

Kevin also scored these questionable chocolates that I found on my desk this morning….  What a brave soul.

You Should See Me Dance + DIY Spinning

I can’t believe I haven’t debuted this lovely number on the blog yet… Probably because there are so many words that it’s difficult to self-portrait it! ;)

I guess the post title was kind of a spoiler, right?

This is the only item of purple clothing I own, people! Purple is my least favorite color second only to blue. And yes, I’m very childish about it. If something is blue, I just don’t want it. (For the record, navy blue is an exception because I just consider it a neutral). But anyhow, I saw this little gem at Forever 21, and I had to have it!! I like to wear it when the Zumba people are coming in… just to intimidate them.

Let’s get to the real part. I managed to grab the computerized spin bike thinger today! Yay! I was totally gunning for it yesterday but our gym’s version of Angelina Jolie was hogging it. I’ve been trying to stay off my feet a little more (hahaha) since my left foot is still feeling a little wonky. So this is my version of taking it easy.

I Googled for some DIY spin workouts, and I even printed one off. But I left it in the car. With my water bottle. So sad. Now I can run miles & miles, but I can’t be bothered to walk back to the car for a little thing like a water bottle! Sigh.

Check out who was creeping on the stepmill directly behind me!?! It was hard to get a clear picture because we were both very bouncy. He’s just paying me back for all the times I’ve stalked him!

I ended up semi-following one of the built-in interval programs. I liked that it counted you in to the next thing, but I cheated and stood up more than I should have. I haven’t done spinning in a while, and I don’t want to be too sore! :)

If you’re curious, our gym has a lot of actual spinning classes. Practically every hour in the before/after work time slots. But I don’t like to commit to an hour or more when spinning/rowing/whatever is really secondary to running. And always will be. :)  Plus I like to do my own thing and rock out to my Don Omar Pandora station!

I ran afterwards during Jeopardy!  (seriously none of the 3 college students knew which singer Eddie Cibrian was married to?!) 4.52 in 38. I probably should have stopped sooner because I could “feel” my foot, but I made a poor choice. I hope I don’t pay for it later. I feel like it’s been “so long” since I’ve had a good run.

Today was definitely a clean-out-the-fridge kind of day! Lunch was a baked sweet potato with a side of plain Greek yogurt (for sour cream) and pizza green beans. Kevin did not believe me, but they did taste kind of like pizza topped with a little marinara & mozz. I love green vegetables dipped in marinara sauce when we are having spaghetti or something so I figure I would just do it straight up! If you see speckles everywhere – that’s garlic powder. Got a little garlic happy!

Dinner was equally uninspired with a nice double pasta combo!! Half with No Sugar Added Marinara & half with a nice nonfat Greek yogurt/garlic/basil/mozz sauce I concocted. And the last vegetables in the house!

By the way, I also did my pushup challenge today when I got home from the gym. I’m debating methods for modified pushups? What do you do? I kind of like the idea of just doing”half” pushups. On your toes, but only going halfway down to practice.

And it’s nto even that impressive here in Denver. Haha. I guess play piano, but I’ve lost some of my mad skills living without a piano. :(

Favorite pasta sauce? I need to learn to make some from scratch, right? Preferably from my window box garden. Haha. That’s not going to happen anytime soon. I prefer my sauce to be tangy and truly prefer No Sugar Added varieties.

Do you spin? I’m going to try to work it into my impulsively complex, totally not-scheduled workout routine. Along with pushups, rowing, and kettlebells. Working out is so fun!!

Cookie Friday: Itty Bitty Carrot Cake Cookies

I knew Kevin would not be a fan of any cookie recipe with “itty bitty” in the title. He prefers his cookies with words like “monster” perhaps “cowboy” in the title.

However, he’s a huge carrot cake fan so I guess he decided to let this one slide!

Itty Bitty Carrot Cake Cookies  (via Oh She Glows)

Ingredients:

  • 1/2 cup whole wheat pastry flour (I’m sure other flours would work!)
  • 1/4 cup regular oats
  • 1/4 cup unsweetened coconut
  • 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1/4-1/3 cup chopped walnuts
  • 1/2 cup shredded carrots, packed
  • 1/4 cup raisins, soaked in water overnight
  • 1/4 cup pure maple syrup, room temperature   <— I organic agave nectar
  • 1/4 cup coconut oil, warmed for about 25 seconds in microwave <— I subbed Melt buttery spread – it has coconut in it!!
  • 1/2 tsp fresh ginger, grated
  • Pinch of ground cinnamon
  • 1/2 tsp pure vanilla extract

Directions: Preheat oven to 350F and line 1 baking sheet with parchment or a non-stick mat. Whisk together the flour, cinnamon, baking powder, salt, and oats in a large bowl. Add in the nuts, coconut, raisins, and shredded carrots. In a small bowl mix the maple syrup, softened coconut oil, vanilla, and freshly grated ginger. Add this to the flour mixture and stir until combined.

Drop about 1 heaping tablespoon of dough onto lined baking sheet, leaving about 2 inches between each cookie. Shape into a ball with hands. Bake for about 12 minutes and cool for 10 minutes on a baking rack.

Yield: 15 bite-sized cookies.

Nutritional info: (per cookie): 54kcals, 2 grams fat, 8 grams carbs, 1 gram fibre, 1 gram protein, 5 grams sugar.

I’m sure the frosting adds a few extra calories, but I made two frosted ones for Kevin’s after-work snack! Today was another half-day for me — hooray!

These cookies came about because I found unsweetened coconut in Super Target last night!!! I was so happy! I’ve been looking for it forever… in all the wrong places, but still!!!

After I pulled the cookies out of the oven, I headed to the apartment’s gym armed with my trusty envelope notes & my mat.

I did a 1-mile walk/jog warm-up, and then jumped into this little treat (via BodyRock). Each move was performed for 50 seconds followed by 10 seconds of rest. The 10 seconds of rest is a joke. Trust me. That’s how long it took me to look at the envelope to see what the next move was.

  • 10 x High Knees & 10 x Mountain Climbers
  • 2 x Squat Jumps & 2 x Push-ups & 1 x Tuck Jumps
  • Centre to Elbow Jump (L&R) & 2 x leg jumps
  • Clean & Press & Squat & Press & Push Up
  • Tuck Jumps x 5 & ½ Burpee & squat hold x 5
  • Spider Knee Push up & Straight Leg Push Up (L&R)
  • Switch Lunge & Press
  • Side Lunge x 2 & L & R Side Punch  & 2 Tuck Jumps
  • 10 x Squat & 10 x Squat Jumps
  • Elbow to Knee jumps 10 x each side
  • Wide leg jumps & Push up
  • Speed run

It was brutal, but only 12 minutes. My legs are crazy sore from all the stairs I’ve been doing  so I have no clue why I decided to do this workout. I just wanted to try it. A new workout is like a new treat for me! Haha.

It’s actually a Crossfit tool (it’s called like 4 Time Crossfit – just search for Tabata Timer), but can be adapted for any kind of Tabata or HITT workouts. I loved this workout because it doesn’t waste time. I hate wasting time in workouts. I mean, you have 10 seconds “off”, but I promise you it’s nothing. I finished off running for a grand total of 5.8 miles (including the warm-up).

And now I’m ready for some weekend. Unfortunately, Kev-kev was not at the gym with me all weekend so he’s dragged me to our real gym. I’m just going to watch Jeopardy! :)

Have you ever tried Tabata/BodyRock/Crossfit? On & off. I always have a tendency to seriously overdo them and not be able to sit up for a few days. It’s all those burpees!!

Meatless Greek Sloppy Joes + My Hidden Sporty Talent

Tonight was one of those nights when an extreme failure led to a new discovery.  I was attempting to make Greek Spinach Feta Burgers from Baked Bree, but I ended up with a mixture that could not be formed into patties of any kind. I think this may be due to the fact that I used fresh rather than frozen spinach. Hard to say. I even tried adding some garbanzo beans to thicken it up, but to no avail.

Meatless Greek Sloppy Joes (inspired by Baked Bree)

2 TBSP olive oil
1 clove garlic minced
1 teaspoon dried oregano
1 teaspoon dried dill
1 cup herb stuffing mix
2 eggs, lightly beaten
1 package fresh spinach
1/2 cup feta cheese crumbled
salt and pepper

The above ending up all being just mixed together and put in the frying pan for about 5 minutes. We served it with this cucumber sauce:

Cucumber Sauce

1 small container non fat greek yogurt
1 small cucumber chopped finely
1 minced garlic clove
1 1/2 teaspoons fresh  lemon juice
salt and pepper

On top of a sandwich thin topped with red pepper + some more feta. We also had some oven-baked fries & hummus on the side!

We earned our dinner with a killer workout tonight. We finally made it to the Sports Training class. We started out with like 1000 ab exercises. We had to take turns counting 1-10. Because I have an extreme fear of speaking in public, I was actually nervous for my turn. Don’t ask me why. Trust me, I was far more annoying than that when I taugh High School P.E. I just don’t know what to do without my trusty whistle! Haha. It ended fine.

The BEST part was that we rotated between jumping rope for 2 minutes, and doing 30 second interval exercise with the trainer. I SCHOOLED that class on jumping rope. It was like my time to shine!! I couldn’t help but show off a little. I used to practice about 30 minutes a day when I went to VIP Fitness in the DR so I was so excited to pull out a rope again.I also tried to shame the other class members by jogging right over when the trainer called out “switch!” Everyone else was like… ambling. Kevin was like,”I knew you were trying to do that.” So predictable.

We got to do some partner exercises!! Lucky I had Good Looking with me or I would’ve had some stranger danger!!! Haha.

Don’t worry! I still embarrassed myself PLENTY before class. This is obviously not us but…

Kevin had been talking about the box jumps he did with the personal trainer last week, and I wanted a demo. And then, of course, I wanted to try. The box obviously was not as high as the crazy guy above is doing, but it was about knee-high on me. My first two attempts were complete body flails. Finally, I made Kevin hold my hand and gave it all I had. I made it up!!!!!!!! I didn’t know I had a crowd watching me. Of course, I had to attempt this at 5:30….. busiest gym hour ever… and while people were waiting for the Sports Training class to begin. Even the trainer saw me! She was all like,”Nice jump.” So mortifying.

Of course, I still had to get my run in afterwards. Even though I was totally wiped, I hung in there for 30 minutes and ran 3.58 miles.

I think I passed my test!!!! My raw score was quite a bit above the minimum passing score for CO, but I won’t have my official results for a bit. Predictably, I aced the English section and performed miserably in math/science. I’m so thankful I didn’t study any more. It was a total waste of time. I’ve taken four CLEP tests, and those were all straight from the book. Verbatim. I memorized the book the day before and passed them all. The Praxis II for Elementary Content Knowledge was totally random. I felt like I could have studied for months and never hit a question on the exam. I’m totally thrilled to have it off my mind though. It was stressing me for no apparent reason.

Have you ever tried a box jump? Harder than it looks. I knew I would stink because I have super bad depth perception so I get really nervous. Especially sans glasses.

Do you like jumping rope? It’s really good exercise. It’s a good thing for me to mix up with running because my body gets sooo adjusted to running that I know it burns a lot fewer calories. My body is a little too efficient for my own good! I used to watch tons of YouTube videos, and that’s where I learned all my fancy tricks. I’m not good at double jumps, but I have a few routines. :)

Have you ever failed a recipe & turned it into something else? Those sloppy joes were like… the trifle of hamburgers. You know, because if you ruin a cake by crumbling it, you can save with a trifle? That makes sense to me anyways!

 

 

 

 

Healthy Lasagna Soup & Rage Over The Last Bosu

I seriously can’t stop with the soups & chilis!

Look at this little gem.

This recipe was inspired by Brenda @ A Farm Girl’s Dabbles, but as usual, I made quite a few modifications and made it my own.

First, I used Jenni-o Ground Turkey.

I love this stuff. Why? Because I don’t have to touch raw meat. I can just put it in the pan. It’s wonderful really. And yes, I start dinner at 7:28. I’m the worst!!!

Ingredients:

  • 1 package Jenni-O Italian Seasoned Ground Turkey cooked with one onion, 1/2 green pepper, and some fresh spinach ( just for fun!)
  • Whole wheat lasagna noodles, boiled
  • Fat Free Low Sodium Chicken Broth
  • Canned Tomatoes
  • Ragu No Sugar Added Tomato & Basil Sauce

Topping: Low-fat cottage cheese mixed with part-skim mozzarella.

I made too many noodles. So today we had soup. Tomorrow it will be like…. awkward spaghetti.

Something beautiful came out of last night’s dinner that I hated. I took the leftover pizza dough, put it in a loaf pan, and made a loaf of bread. That became this morning’s PB2 & jam sandwich and tonight’s cheese panini. So delicious. It was like Panera’s Pick Two. At home. So you don’t have to sit there and dread going out in the freezing cold after you finish your meal. ;)

Earlier…

Kevin had an unexpected meeting come up at work so he emailed me to meet him early for lunch. Since we had zero time, we hit up the cafeteria in my building.

I partook of the baked potato bar/salad bar. I ate that ALL. I loved it with the broccoli. So wonderful.

Kevin James had some kind of lame salad. Look at that face. That’s the face of someone who doesn’t think we should name our twin sons Noel and Emmanuel. Weirdo.

The gym tonight was a little traumatic. I wanted to go to this cool class. Like Chiseled or something like that. It uses bosus, weights, those exercise balls — it looks really cool. We rushed as fast as we could and we got to the gym at 5:31. One lousy minute late. The class was packed and they were out of equipment. Wahhhhh. I was  reallly mad. I know it sounds like overreacting, but I had been sitting at my desk looking forward to this class since 8AM!!!!!!

After I ran a mile, I cooled down and had to apologize to Kevin for my bad attitude. Woops!!!!

I settled in for a run. The bright side is that at least I got to watch Jeopardy!!! I answered a $1000 question that none of the contestants knew. It was a Biblical picture and they asked who the tax collector was. Matthew!! I always dominate the Bible categories, and I’m shocked when crazy genius people struggle with them.

I ended up running 5.57 miles @ 8:18 pace.

I think that if you want to buy this magazine, you should automatically get the senior citizen discount. Even Kardashian gossip couldn’t drag me away from this beauty!! It has some really good ideas that I must Google later!

What would your best Jeopardy! category be? I’d own Classical Music, Composers, Running, and Bible stuff. I was doing really well in the Urban Dictionary category too.

Favorite thing to top a baked potato? I think I’m going to be making these at home someday soon, so I need fresh ideas!!!

 

 

 

Superfudge Cake + My Idea of a Rest Day

The recipe was actually Weight Watchers Hot Fudge Pudding Cake, but I felt it deserved a better title.

Ingredients:
1 cup all-purpose flour
1/3 cup sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup nonfat milk
1 large egg, lightly beaten
2 tablespoons canola oil
1 teaspoon vanilla extract
3/4 cup brown sugar
1 1/3 cups hot strong coffee <—– Super cool secret ingredient! :)

Directions:

  1. Preheat oven to 375°F. Lightly coat an 8-by-8-inch baking dish with cooking spray.
  2. Stir together flour, sugar, cocoa, baking powder and salt in a large bowl. Combine milk, egg, oil and vanilla in a glass measuring cup. Make a well in center of the dry ingredients and gradually pour in the milk mixture, stirring until combined. Spoon into the prepared pan and spread evenly.
  3. Dissolve brown sugar in coffee; spoon over batter. Bake until a toothpick inserted in center comes out clean, about 25 minutes. Let stand for 10 minutes; serve hot or warm.

Note: Don’t freak out when you put it in the oven and it just looks like brownie batter drowned in coffeee. It will bake beautifully!

My lunch was simple, but a big fave. Some brown rice & beans + vegetables + avocado. Super colorful, right? I ended up picking out the tomatoes. They just tasted weird. Kevin had basically the same thing except with cheese and tortillas because he’s a manly man.

What a hottie! My favorite part of lunch today was that I didn’t TELL Kevin that I made him dessert. I just waited for him to finish his last bite and asked,”So are you full?” I think Kevin caught on to my games because he furtively looked around before replying,”Noooo..” I had the cake hiding in the oven. I love being a little wifey and surprising him with dessert. I know, I know. I can’t believe what a little homemaker I’ve become either!

I really hate taking rest days. I haven’t missed a single day of running a 5k or more since we moved to Denver. However, lately the two-a-days have been getting to me, and I’ve been waking up just super sore with no will to live. So today I tried reading some articles online to psych myself up for a rest day. Now the reason I hate taking rest days is simple. Once I am off the wagon, I am OFF the wagon. Meaning the day AFTER a rest day is just torture for me and it takes every bit of my amazing self-discipline to get myself to the gym.

Here’s what I found:

A day off every seven to 14 days restocks glycogen stores, builds strength, and reduces fatigue. Without recovery, adaptation may occur short-term, but ultimately it will fail. And since most injuries come from overuse, a day of cross-training, rest, or easy miles can prevent three-or four-week forced breaks caused by, say, ITB syndrome.

That said, I can appreciate how some find it hard to let the running shoes sit. On his rest day, German Silva, who won the 1994 and ’95 NYC Marathons, ran an easy three miles, keeping his heart rate below 60 percent of max. These jogs may not boost VO2 max, but they loosen up the muscles to fend off sluggishness.

So is a little running on a rest day okay for mere mortals? It can be. As long as you keep the volume and intensity very light, you can still get the recovery benefits. (The same goes for cross-training on a rest day: Keep it relaxed.)

This news made me sooooo happy. I ran the slowest I’ve ever run in MY life. 4.2 miles while watching Say Yes to the Dress. I was plodding. I felt like an ox, but it was better than sitting on the couch! I also did 20 minutes on the elliptical because the gym is like a quarter mile away from my front door and I like to waste the walk there. But I kept the intensity super low. I had to skip all my favorite songs so I wouldn’t push it! Haha. My secret weapon was to wear PANTS. I figured any workout I could do in annoying boot cut sweats isn’t going to kill me!

Do you like to take rest days? No.

What’s your favorite afternoon snack?  100-calorie kettle corn. Although it’s annoying because it’s really hard to eat while blogging!
